Japanese kitchen knife sliver with sharp features will be made of ZDP-189 steel. Usually San mai Processes (Lamination Processes) are used, that is, the blade core is ZDP-189 steel, and the softened stainless steel is covered on both sides. Such a blade can maintain sharpness for a long time, its softer outer layer makes it easier to grind sharpness, and it can also protect the influence of the blade core steel from external factors.
