ZDP-189 Japanese Kiritsuke Gyuto Knife 205mm

This series is made from Hitachi ZDP-189 core steel laminated in stainless. ZDP-189 has a very high hardness ~67 hrc and extraordinary edge retention. This blade is beautifully brush finished with thin and the edge is convex grind. Comes fitted with octagonal rosewood handle.

**Always hand wash and dry your knives thoroughly.

**Do not immerse the knife in water for a long time.
**Never put knives in the dishwasher.
**Avoid cleaners containing bleach or citrus extracts.
**Do not use marble or tile cutting boards. Always use a soft cutting board such as wood.
