Our knives use Japanese cladding technology, that is, mild carbon stainless steel sandwiching fat carbon stainless steel, with high-performance cutting-edge cores such as VG-10, AUS-10. This sandwich construction allows the outer layers to protect and support the super-hard carbon steel center layer that forms the edge of the blade. This makes the Damascus steel chef's knife have excellent strength against bending and breaking strength, and also has a hardness as high as 61 HRC.
