This 8-inch Japanese Gyuto knife is crafted with a blade forged from Swedish Sandvik 12C27 stainless steel, a material renowned for its exceptional purity and fine grain structure. With a hardness rating of HRC 60–61, 12C27 delivers an outstanding balance of edge retention, corrosion resistance, and ease of sharpening. The handle is constructed from premium G10 composite, a fiberglass and epoxy laminate known for its durability, slip resistance, and moisture resistance.
